SPUR Restaurant & Bar Taking Shape at Former Gilberto's Location in Roseburg

ROSEBURG, Ore. - A new locally owned restaurant and bar is taking shape along Northeast Stephens Street, with its owners working toward a September opening.

SPUR Restaurant & Bar is being developed at 1347 NE Stephens St., the longtime home of Gilberto's Mexican Restaurant. The property was recently purchased by four members of the same family, who are now remodeling the space and preparing to introduce a considerably different dining concept.

New owner Katrina Peterman announced the purchase in July, saying she and Doug, along with her sister Kyana and Kyana's husband Darin, had purchased Gilberto's and were hoping to have the new restaurant open during the first week of September.

The owners have cautioned that the opening timeline could change as remodeling and other preparations continue.

SPUR is being described as an upscale casual restaurant built around "elevated comfort cuisine," combining Southern influences, Western roots and ingredients and flavors associated with the Pacific Northwest.

The restaurant's website makes a point of distinguishing the concept from both fine dining and a themed Western restaurant. Instead, the owners are aiming for something polished but approachable, with an atmosphere designed for dinners, cocktails, date nights and gatherings.

The menu remains under development, but SPUR says customers can expect shareable comfort-food starters, entrees prepared with fire, handcrafted cocktails, wine and alcohol-free options.

A menu preview is expected to be released closer to opening.

The restaurant's name also carries a family connection. According to SPUR, the name comes from Spur, Texas, where the owners' grandmother was raised. The family says that connection helped inspire the restaurant's emphasis on warmth, hospitality and creating a place where customers feel comfortable gathering.

The new restaurant follows the end of a long chapter at the Northeast Stephens Street location.

Gilberto's Mexican Restaurant permanently closed May 15 after 42 years in business. The Duarte family announced earlier this year that Gilberto Sr. was retiring, bringing an end to one of Roseburg's longtime family-owned restaurants.

Rather than continuing the previous Mexican restaurant concept, the new ownership group is renovating the space and creating an entirely new restaurant around the SPUR brand.

Work is also underway to build the restaurant's opening staff.

SPUR is currently accepting applications for servers, bartenders, hosts, line cooks, prep cooks, dishwashers and management positions. Applications can be submitted through the restaurant's website.

The restaurant has not yet announced its operating hours or whether reservations will be available. Those details are expected to be released closer to opening.
